One Fish. Two Fish.
Victoria and Lindsay whip up two easy, delish and nutritious fish dishes!

Vicky "I Wish for FISH..."
A delicious easy package of fish you can prepare ahead of time then simply toss when done. Easy and elegant.
I use Cod or any white flaky fish but any white flaky fish will work.
Approximately 1&½ lbs will serve 2 ppl with sides.
You will need one bulb of Fennel or anise
2 lemons
Capers
Flakey sea salt or kosher salt
Cracked black or Pink Peppercorns Cracked (used the bottom of a heavy pan}
Olive oil
A large piece of heavy-duty foil or double up.
We are making a package to fold up so gather plenty of foil!
Open up and we are going to layer VERY FINELY SLICED PIECES OF FENNEL &, LEMON then sprinkle some capers S&P tiny drizzle of olive oil
Place fish on top then REPEAT
Make it look pretty so that when you open it the presentation is nice. I like to add chopped fennel frons on top. {that is the top of the fennel-the greens}
Fold up loosely but tight on top and at the sides...we want all the juices to stay in!
DON'T WORRY IF YOUR NOT A BIG FENNEL FAN-IT TOTALLY MELLOWS OUT!
There are 2 ways to cook this.
On the bbq--high heat 6 min per side, rest for 2 min. Or bake in a 400-degree oven on the bottom rack for 10-15 min. Take a peek-lemons will be caramelized on top.
Serve with a salad or some couscous or rice it makes a nice lemony sauce.
Lindsay "Let's get saucy..."
Get out and get grilling. Easy and delicious seared tuna steak with an antioxidant-rich blueberry sauce.
Grab 2, 1 inch tuna steaks, rinse and pat dry.
Oil the steaks and sprinkle with salt, cayenne pepper, and black pepper.
Sear on the grill (high heat, 2 minutes per side - rotate for 1 -2 more minutes for grill marks)
Sauce -
1 cup blueberries
1/2 cup balsamic vinegar
Spice mix: cinnamon, cloves, cayenne pepper, salt, black pepper
Bring to boil and let sit
Place tuna over mixed greens and ladle the sauce on top. Enjoy!
